Chicken and Pepper Quesadillas

Ingredients:

  • 1 (6-ounce) package Hormel® Natural Choice® Grilled Carved Chicken Breast
  • 1/2 cup La Victoria® Salsa Suprema Mild
  • 4 CHI-CHI'S® 6 inch Fajita Tortilla
  • 1 cup sliced bell pepper
  • 2 cups shredded Mexican cheese blend
  • Guacamole
  • Sour cream

Directions:

  1. In bowl, combine chicken and salsa; mix well.
  2. On half of each tortilla, layer chicken mixture, bell pepper and cheese. Gently fold tortilla over filling. Place tortillas on lightly greased skillet.
  3. Cook quesadillas over medium-high heat, turning once, 3 to 4 minutes or until browned and cheese is melted.
  4. Cut quesadillas into wedges; serve with guacamole, additional salsa and sour cream, if desired.
