The buttery taste and rich texture of the crisp potato is perfectly complemented by the flavor of the lean Canadian bacon. Further, the cheese adds a welcoming gooiness and tangy aftertaste.

Ingredients:

  • 2 cups quartered Yukon Gold potatoes
  • 1/2 cup chopped onion
  • 2 slices Hormel® Natural Choice® Canadian Bacon, diced
  • 2 slices Swiss or Gruyère cheese
  • 1 tablespoon butter

Directions:

  1. In saucepan, combine potatoes and enough water to cover. Cook over high heat 12 minutes; drain. Cool and grate potatoes.
  2. In bowl, combine grated potatoes and onion. Stir Canadian bacon and cheese into potato mixture.
  3. In skillet, melt butter. Place potato mixture in skillet. With spatula, press down on potato mixture to create large pancake. Cook 4 to 5 minutes on each side or until golden brown.

Notes:

  1. Two frozen hashbrown cakes, thawed, can be substituted for the fresh rostis. Just stir crumbled, thawed hashbrowns into the bacon and cheese.
