Ingredients:

1 tablespoon balsamic vinegar

1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves

1 teaspoon minced garlic
-
1/2 cup extra-virgin olive oil
-
2 slices Hormel® Natural Choice® Original Bacon
-
1 red potato or fingerling potato
-
1 (6-ounce) can tuna packed in water
-
2 tablespoons chopped sun-dried tomatoes packed in oil
-
1 cup chopped romaine lettuce
Directions:

To make vinaigrette, in bowl, combine vinegar, basil and garlic. Whisk in oil.

In skillet, cook bacon over medium heat until crisp; drain on paper towels. Chop when cool.

In small saucepan, cook potato in boiling water until tender. Thinly slice potato.

In bowl, combine bacon, potato, tuna, tomatoes and 1/2 cup vinaigrette. Serve on bed of lettuce.
Notes:

Replace the homemade relish with prepared balsamic vinaigrette, if you'd like.
