Turkey and Ham Couscous Salad

Ingredients:

  • 1 1/2 cups whole wheat or regular couscous
  • 3 cups reduced-sodium fat-free chicken broth, water or fruit juice
  • 1/2 teaspoon salt
  • 8 ( ) slices Hormel® Natural Choice® Honey Deli Ham, coarsely chopped
  • 7 ( ) slices Hormel® Natural Choice® Oven Roasted Deli Turkey, coarsely chopped
  • 1 cup dried mixed fruit bits
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped fresh oregano, if desired
  • 1/3 cup light raspberry vinaigrette

Directions:

  1. Prepare couscous according to package directions using broth and salt; cool slightly. Stir in ham, turkey, fruit bits, onions and oregano; mix well. Cover. Refrigerate at least 1 hour.
  2. Stir vinaigrette into salad just before serving. Line medium plate with lettuce; top with salad. Serve with additional vinaigrette. Garnish with additional fresh oregano, if desired.
