Ingredients:

1/4 cup olive oil or canola oil

2 cups shredded Monterey Jack cheese

4 teaspoons finely chopped fresh chives

1 jalapeño pepper, if desired and finely diced

8 fajita-size flour tortillas

1 (8-ounce) package Hormel® Natural Choice® Smoked Deli Turkey, chopped

HERDEZ® medium salsa
Directions:

Lightly brush one side of each tortilla with oil; lay, oil-side-down, on clean surface.

Top 4 tortillas with 1/4 each of cheese, turkey, chives and jalapeño; top with remaining tortillas, oil-side-up.

Heat nonstick skillet over medium-high heat. Place quesadillas in skillet; cook 2 minutes or until lightly browned and cheese begins to melt. With tongs, turn quesadillas; cook 2 minutes longer. Cool slightly.

Cut quesadillas into quarters or eighths with kitchen scissors or pizza cutter. Serve with salsa.
Notes:

These easy-to-make quesadillas serve 2 as a main course or 4 to 6 as an appetizer. For variety, use flavored tortillas, such as spinach or tomato. Give them an extra infusion of smokiness by cooking them on a grill using natural hardwood charcoal.
