Ingredients:

4 large eggs
-
2 tablespoons 2% or skim milk

2 tablespoons chopped green onions

1/2 teaspoon salt

1/4 teaspoon coarsely ground pepper

1 cup shredded Swiss or Cheddar cheese

4 potato lefse or flour tortillas, warmed

1/4 cup lingonberries or fruit salsa, if desired

4 slices Hormel® Natural Choice® Original Bacon, cooked and coarsely chopped
Directions:

In bowl, stir together eggs, milk, onions, salt and pepper.

Coat medium nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add egg mixture. Cook, stirring frequently, 2 to 3 minutes or until eggs are almost set. Stir in bacon and cheese. Cook 1 to 2 minutes longer or until eggs are set and cheese is melted.

Spoon 1/4 of egg mixture onto each lefse. Roll up; slice diagonally in half. Serve with lingonberries or fruit salsa.
