Scrambled Eggs Rollup
Lefse is Scandinavian flat bread made from mashed potatoes. Look for it in the refrigerated section of most large supermarkets. For more creative round-the-world twists to a breakfast rollup try using Indian Naan flat bread, Italian flat bread, cracker bread or crepes. Add a fruit based topping such as cranberry relish or chutney for extra flavor.

Ingredients

4 eggs

2 tablespoons 2 percent or skim milk

2 tablespoons chopped green onions

1/2 teaspoon salt

1/4 teaspoon coarsely ground pepper

4 slices Hormel® Natural Choice™ bacon, cooked, coarsely chopped or

8 slices Hormel® Natural Choice® honey deli ham, coarsely chopped

1 cup shredded Swiss or Cheddar cheese

4 serving-size sheets of potato lefse or CHI-CHI'S® tortillas, warmed

1/4 cup lingonberries or fruit salsa, if desired

Directions

Stir together the eggs, milk, green onions, salt and pepper. Spray medium non-stick skillet with cooking spray. Heat skillet over medium-high heat. Add egg mixture. Cook 2 to 3 minutes or until eggs are almost set, stirring frequently. Stir in bacon and cheese. Cook 1 to 2 minutes or until eggs are set and cheese is melted.


Spoon 1/4 of the egg mixture onto each sheet of lefse or flour tortillas. Roll up and slice diagonally in half. Serve with lingonberries or fruit salsa, if desired.
