Panzanella Salad
This dish is inspired by the classic Italian panzanella and is a clever way to use day-old Tuscan bread.


Ingredients

1 pkg. (9 oz.) HORMEL® NATURAL CHOICE® Smoked Deli Ham,    cut into strips

8 oz. coarse Italian or rustic bread, 4 to 5 days old, crust removed

3 medium tomatoes, coarsely diced

12 PELOPONNESE® Pitted Kalamata Olives, quartered

1 medium red onion, minced

12 large fresh basil leaves
     bottled vinaigrette

Directions

Tear the bread into pieces and soak in a bowl of cold water for 2 to 3 minutes. Drain and squeeze the bread dry, removing all the water. Place the bread in a large bowl and break it up into smaller pieces with a fork. Set aside. In a small bowl, combine tomatoes, olives, onions, 1/3 cup vinaigrette and stir gently. Add the vinaigrette mixture to the bread pieces and combine well. Shred basil leaves and add to the mixture. Add ham strips and mix gently to combine.
