Panini with Turkey and Roasted Red Peppers
You'll find panini ("little breads") in sandwich shops all over Italy. They're traditionally assembled with meat, cheese, vegetables, and mayonnaise, then grilled until crispy on the outside and warmed on the inside. If you don't have a panini maker, you can use a sandwich grill, waffle iron, or non-stick skillet. Cook sandwich 3 to 4 minutes on each side, pressing gently with a spatula or the back side of another skillet.
6 slices HORMEL® NATURAL CHOICE® Oven Roasted Deli Turkey
4 thick slices country-style bread
1 T. CARAPELLI® Olive Oil
4 slices provolone cheese
4 T. PELOPONNESE® Roasted Sweet Red Peppers, thinly sliced
4 t. mayonnaise
Preheat a panini maker or stove-top panini grill, following manufacturer's instructions. Brush one side of 2 bread slices with olive oil. Place bread, oiled side down, on a clean surface. Top the bread with 3 slices of turkey, 2 slices of cheese, and 2 tablespoons of red peppers. Spread 1 teaspoon mayonnaise on each of the remaining bread slices and place on top of sandwich. Brush top of sandwich with olive oil before grilling. Grill in panini maker until the bread is browned and cheese is melted (about 3 to 5 minutes).
