The mommymuscle™ Salad
Here is one meal that is packed with power. Full of protein, good carbs and antioxidants, this quick and easy salad will leave you and your toddler feeling healthy and full of energy!
Feeds: 4-6 people
Prep Time: 5 minutes
1 package HORMEL® NATURAL CHOICE™ oven roasted or grilled carved chicken breast, diced into bite-size pieces
1 package spinach leaves, chopped into bite-size pieces as well
1 cup blueberries
2 ounces chopped walnuts (hold off on these for the younger children until you are sure that they are not allergic, but make sure to toss these on your salad after dishing it out to the little ones!)
½ cup Mandarin orange slices
2 tablespoons Balsamic vinegar and olive oil dressing
Mix all ingredients and enjoy!
If your toddler doesn't like Balsamic vinegar, try French dressing. My toddler will eat anything that has ketchup on it (I am not suggesting that you put ketchup on a salad) and red French dressing looks a little bit like ketchup! I opt for the lower sugar and lower fat options and Mazie loves it
