Basic Pairings
- Cheeses: The natural saltiness and tenderness of turkey is enhanced by the smoky qualities and acidity of smoked and blue cheeses. Also, turkey meat has an intrinsic sweetness that is complemented by a similar yet lighter sweetness found in smoked cheeses. This sweetness, countered with blue cheese's inherent pungency, results in a nice balance of flavors.
- Beverages: Lemonade pairs perfectly with turkey. The light crispness, pronounced sweetness and strong citrus zest of this drink contrasts well with the turkey's flavorful juices. These characteristics help to accentuate the meat's enjoyable sweetness and saltiness on your palate.
- Condiments: Turkey is a versatile meat that can be paired with a variety of flavors. Sauces, dressings or spices mixed with tones of fruit, thyme, sage, parsley or medium-to-high levels of acid highlight the taste of turkey. For example, gravy, winter fruit chutneys and sauerkraut are all good pairings.
- Accompaniments: Freshly baked whole wheat or whole grain breads allow the true flavors of the meat and other components of your dish to shine through.
