Oven Roasted Turkey Burrito with
Chipotle, Black Bean and Corn Salsa
PREP TIME: 5 MINUTES, SERVES 1
Chipotle peppers, lime and corn are paired with oven roasted turkey to make this burrito. The heat and smokiness of the chipotle peppers highlight the meat's "roasted" flavor. The acidity and sourness of the lime and the sweetness of the corn tickle the palate and accentuate the turkey's saltiness.
1 (10-inch) MANNY'S® Tortilla, warmed
3 slices HORMEL® NATURAL CHOICE™ Oven Roasted Deli Turkey
¼ cup cooked rice pilaf
¼ cup shredded smoked Cheddar cheese
1 leaf Romaine lettuce
2 tablespoons sour cream
¼ cup store-bought salsa such as HERDEZ® Salsa Chipotle
or fresh Chipotle, Black Bean and Corn Salsa*
Lay tortilla on flat surface. Place turkey slices down center of tortilla. Top turkey with remaining ingredients. Fold burrito.

Chipotle, Black Bean and Corn Salsa
½ cup drained black beans
½ cup finely chopped tomato
¼ cup thawed frozen corn
2 tablespoons chopped cilantro
2 tablespoons lime juice
1 tablespoon chopped onion
½ teaspoon salt
1 teaspoon HERDEZ® Chipotle Peppers in Adobo Sauce, chopped
1 garlic clove, minced
1 teaspoon minced green onion
1 teaspoon black pepper
½ teaspoon cumin
In bowl, combine all ingredients. Makes about 1½ cups.
