Tamarind, also known as the Indian date, is a very common ingredient in Southern India. It comes in forms that range from sour to sweet and can be used in both savory and dessert dishes as well as drinks. Tamarind concentrate can be found in fresh/organic groceries, such as Whole Foods.

Honey Turkey Citrus Salad
PREP TIME: 5 MINUTES, SERVES 1
This dish is comprised of sweet, sour, salty and bitter notes along with a variety of colors and textures. The turkey meat is complemented by the flavors at play: tamarind offers sour, orange offers sweet-sour, avocado adds a light astringency and spinach cleanses the palate.


Ingredients

2 cups fresh spinach

2 slices HORMEL® NATURAL CHOICE™ Honey Deli Turkey

½ avocado, peeled and cut into slices

¼ cup fresh or dried apricots, cut into small pieces

2 tablespoons store-bought citrus salad dressing or Tamarind-Orange Vinaigrette*

1 tablespoon fresh mint, minced

Directions

In small bowl, combine spinach, turkey, avocado and apricots. Pour vinaigrette over salad and toss. Sprinkle with mint.

Tamarind-Orange Vinaigrette

Ingredients

1 tablespoon tamarind concentrate

2 tablespoons hot water

2 tablespoons frozen orange juice concentrate, thawed

1½ tablespoons honey

1 teaspoon salt

½ teaspoon black pepper

¾ cup CARAPELLI® Olive Oil

Directions

In small bowl, add tamarind concentrate to hot water; stir to dissolve. In blender, combine diluted tamarind juice, orange juice concentrate, honey, salt and black pepper. Blend 2 minutes. While blending, slowly add oil. Blend until mixture thickens.
