Fiery Peanut Chicken Salad
PREP TIME: 15 MINUTES, SERVES 1
The creamy peanut butter sauce in this dish complements the tenderness and richness of oven-roasted chicken. The fresh vegetables keep the dish colorful, light and crunchy.


Ingredients

1 cup soba noodles or whole wheat spaghetti noodles, cooked

½ cup HORMEL® NATURAL CHOICE™ Oven Roasted Carved Chicken Breast

¼ cup snow peas

1 carrot, sliced into very thin slices

3 tablespoons HOUSE OF TSANG® HIBACHI GRILL® Thai Peanut Sauce or homemade Fiery Peanut Sauce*

1 tablespoon toasted sesame seeds

1 medium purple cabbage leaf

1 tablespoon chopped cilantro, if desired

Directions

In bowl, combine noodles, carved chicken breast, snow peas, carrot slices, peanut sauce and sesame seeds. Place salad mixture in cabbage leaf, using the cabbage leaf as a bowl. Sprinkle with cilantro.

Fiery Peanut Sauce

Ingredients

1 tablespoon CARAPELLI® Olive Oil

2 garlic cloves, minced

1 cup creamy peanut butter

1 cup coconut milk

2 tablespoons HOUSE OF TSANG® Hoisin Sauce

2 tablespoons sugar

1 teaspoon red pepper flakes

½ teaspoon ginger juice

Directions

In small saucepan over medium heat, warm oil. Add garlic and sauté 1 minute. Add peanut butter, coconut milk, hoisin sauce, sugar and red pepper flakes. Bring to a boil. Reduce heat and simmer 5 minutes. Add ginger juice.
