Chicken Lavash Roll Up - Lavash, from Armenia
PREP TIME: 5 MINUTES, SERVES 1
The astringent zest of the yogurt and artichokes along with the sweet peppers accentuate the grilled flavors of the chicken. Mint adds a refreshing aspect that helps to balance the sauce.
1 soft lavash wrap or burrito size MANNY'S® Tortilla
2 tablespoons store-bought tsatsiki sauce or Chunky Cucumber-Red Pepper Tsatsiki Sauce*
2 slices smoked Provolone cheese
1 cup HORMEL® NATURAL CHOICE™ Grilled Carved Chicken Breast
¼ cup chopped artichoke hearts
1 tomato, seeded and chopped
Spread lavash with tsatsiki sauce leaving a 1-inch border around outer edge. Place cheese in center of lavash. Layer with chicken, artichoke hearts and tomato. Roll lavash around filling.

Chunky Cucumber-Red Pepper Tsatsiki Sauce
½ seedless cucumber, diced
½ cup whole milk yogurt
¼ cup diced red bell pepper
1 teaspoon dried oregano leaves
1 garlic clove, minced
¼ teaspoon lemon juice
2 tablespoons mint, minced
Salt and black pepper, to taste
In small mixing bowl, combine all ingredients except mint. Stir well. Fold in mint. Refrigerate until ready to use.
