Gorgonzola hails from a small town outside Milan, Italy. This cheese is a member of the blue family and comes in either soft or hard form. The softer yields a milder, sweeter pungency than its harder, more intense-flavored counterpart. The degree of pungency is due to the length of aging and the amount of blue/green veins present. This unique degree of flavor flexability allows you to match blue cheese flavors based on what you're making. For example, try dolce (sweet) Gorgonzola with pears or aged blue melted on top of steak.

Beef and Blue Sandwich
PREP TIME: 25 MINUTES, SERVES 1
This sandwich pairs two ingredients that are a match made in heaven: beef and blue cheese. The natural roasted flavor of the beef is accentuated by the rich, salty and creamy coolness of the cheese. The caramelized onion adds a layer of sweetness to the sandwich, which contrasts nicely with the cheese's somewhat strong astringent taste.
¼ cup thinly sliced red onion
1 tablespoon CARAPELLI® Olive Oil
1 tablespoon balsamic vinegar
1 (6-inch) soft French baguette, split horizontally
1 sprig fresh thyme or pinch dried thyme leaves
3 slices HORMEL® NATURAL CHOICE™ Roast Beef
½ cup store-bought Gorgonzola or blue cheese or Gorgonzola Sauce*
In small skillet, sauté onion in oil 5 minutes or until very soft. Add balsamic vinegar and cook 2 to 3 minutes longer. Spread caramelized onions on bottom of baguette. Top with thyme sprig, roast beef and cheese. Cover with top half of baguette.

Gorgonzola Sauce
3 tablespoons heavy cream
½ teaspoon minced garlic
½ cup Gorgonzola or blue cheese
3 tablespoons mayonnaise
1 teaspoon chopped parsley
¼ teaspoon Worcestershire sauce
In small saucepan over medium heat, cook cream and garlic 2 minutes. Remove from heat. Stir in remaining ingredients.
