Meat Pairing Guide: Bacon

Basic Pairings

  • Vegetables: Green vegetables, such as green beans, Brussels sprouts, broccoli and peas, which are relatively neutral in flavor, come alive when mixed with the saltiness and crispness of bacon.
  • Meats/Fish: Bacon is used extensively as an aromatic and flavoring ingredient, particularly with leaner cuts of meat or fish. Most often it is used to provide richness in flavor, which is both salty and smoky in nature.
  • Condiments: Tomato-based salsas, sweet mustards, salad dressings and aiolis all accentuate the taste of bacon. To liven up a dish, try using fresh salsa. Its acidity, natural sweetness and heat bring out the saltiness of bacon and offer a pleasant textural contrast.
  • Accompaniments: Because of bacon's strong flavor, accompaniments can be mild to neutral in nature, such as greens, lightly flavored breads and potatoes, among others.
